Mix the garlic, ginger, red palm oil, salt, black pepper, and cayenne in a mixing bowl. This is the marinade. In another bowl, add the chicken pieces, pour the marinade all over it, and ensure they cover the chicken well. Cover the bowl and place it in a refrigerator for at least an hour. The longer they stay in the fridge, the better. Suppose you are using an oven, roast at 105 degrees Fahrenheit. Set up your grill to a medium-high flame and cook until blackened. - Spray a large pan with low-calorie cooking spray and place on high heat.
- Add chicken, pepper, and onions and stir fry until lightly brown, then add Diet Coke, chicken stock, passata, tomato puree, garlic, soy sauce, and herbs.
- Bring to a boil, then allow to simmer for 15 minutes.
- Add the sugar snap peas, comma stair, and increase the heat to medium-high; cook for another 15 minutes or until chicken is thoroughly cooked and veggies tender.
