Fries are always the perfect complement to any meal or just a snack by itself. But what constitutes the perfect fries? The perfect fries have to be lightly golden and crispy on the outside yet soft and fluffy on the inside with just the right amount of salt.
To make the perfect fries the potatoes have to be just right; large farm fresh potatoes are recommended. The potatoes should be parboiled to ensure a shorter cooking time and that they are cooked through. After being boiled until a fork can piers through with less resistance the potatoes should be cut into equal bit sizes (cubes or strips), making sure not to cut them too small as that will affect how they fry.
The potato cubes or strips should be placed in a bowl and rinsed to remove the extra starch, before leaving them to rest. The fries should be coated with cornstarch as it helps create the golden crispy outside everyone loves. Thereafter the fries should be placed on a paper towel and felt to rest. While your fries are resting you should get a large pot or pan out and fill it (enough to submerge the fries in) with oil, vegetable oil, or canola oil is recommended, but any oil will do.
Put the pot on the stove and make sure that your stove is on medium to high heat. Once the oil has heated up and you can see that it is simmering it is time to drop your fries in. Frying is a quick process so be sure to keep an eye on it, once you remove the fries from the pot they should be placed on a paper towel to allow the excess oil to drain. Salt your fries to taste and you should have the perfect fries.
