Jan 05, 2022 ByClaire Miles

It’s hard not to love the tasty Christmas treat known as eggnog, the yummy creamy drink has been a longtime holiday tradition for many and a reminder of the joys of the season. Now that Christmas has come and gone and many might be doing a sober January we thought we’d put together a tasty alcohol-free recipe for the seasonal drink.

To begin with, you will need to gather the ingredients needed:

– 6 eggs (separated)

– 1 cup white sugar

– 1 teaspoon ground nutmeg

– 2 cups heavy cream

– 1/3 cup vanilla extract

-1/4 tsp salt

– 4 cups whole milk

Step 1: Separate 6 eggs into whites and yolks in two separate bowls.

Step 2: Start heating up a saucepan on medium heat with 4 cups of milk. Don’t go over 170 degrees Fahrenheit

Step 3: Add 1 cup white sugar and 1/4 tsp salt to the egg yolks.

Step 4: Whisk together until all of the sugar and salt have dissolved into the eggs yolks. Keep whisking until the mixture has lightened in color and doubled in size.

Step 5: Add 2 cups heavy cream to a large bowl. With an electric mixer, begin to whip up the heavy cream on high speed. As soon as you begin to see bubbles forming in the mixture, begin adding in the egg yolk mixture.

Step 6: Add 1/3 cup vanilla extract to the mixture. Then with a large spoon or spatula, fold in the heavy cream and egg yolk mixture together until fully incorporated.

Step 7: Add 1/3 cup milk to the mixture. Mix together until fully incorporated.

Step 8: Pour the mixture into a large pitcher, then pour everything back into your saucepan on medium heat. Whisk everything together as it heats up slowly. Keep whisking until the mixture begins to thicken, which should take about 10 minutes.

Step 9: Make sure you keep stirring your eggnog as it starts to boil slowly. Boil for 3 minutes while still whisking vigorously all over the place. Then remove the pot from heat and continue stirring until the bottom of the pan is no longer burning hot or warm.

Step 11: Pour your mixture into heat safe containers and refrigerate for 8 hours.
